A perfect batch of freshly-popped kernels is the ultimate movie night snack. Add a few more ingredients and you’ve got yourself a bowl of indulgent caramel-coated popcorn, which can just as easily be served as a dessert.
SALTED CARAMEL POPCORN
INGREDIENTS
1 tbsp vegetable oil
100g popcorn maize
110g unsalted butter, diced
75g caster sugar
1 tbsp honey
½ tsp sea salt flakes
METHOD
1. Line a baking tray with greaseproof paper.
2. Heat the oil in a large pan over a medium heat. Add the popcorn. Cover and cook for 3-4 minutes, shaking the pan occasionally until the popping stops. Tip into a large bowl.
3. Wipe the inside of the pan with a piece of kitchen paper. Add the butter, sugar, honey and salt. Cook gently, stirring until the sugar dissolves. Bring to the boil. Allow to bubble for 3-4 minutes, without stirring, until caramel coloured.
4. Add the popcorn, stirring until coated. Quickly tip onto the baking trays, spreading out into a single layer, and leave to set. Break up into pieces and serve.
