Woodland Dining Experiences Fuelled by Fire, Nestled In The Surrey Hills
Nestled deep in the woods in Surrey, you’ll find The Salt Box and their signature Feasts Over Fire, featuring seasonally and wildly inspired food, laughter and good cheer as they celebrate the very finest local ingredients cooked over fire.
Their woodland glen makes for an idyllic natural setting to bring together old friends and new – with feasts centred around their shared dining tables.
At The Salt Box, each and every menu is centred around the flames. Cooking over an open fire is the oldest and most primitive method of cooking known to man and they are firm believers that everything tastes better cooked over an open flame. Each feast is cooked over a wood fire in an open kitchen, with plenty of opportunity for guests to watch the chefs at work. As the evening unfolds, Co-Founder and Head Chef Christian provides insight into the inspiration behind each dish, including where ingredients are sourced from, with a strong focus on seasonal, local and wild.
Feasts kick off with a seasonal cocktail, created using local spirits and homemade liqueurs, infused with foraged herbs and berries. Sourcing from the very best of Surrey and Sussex farmers and producers, guests enjoy a four course menu, followed by a steaming cup of wild tea to close the evening. Encapsulating a ‘nose-to-tail and root-to-fruit’ ethos, each menu is mindfully curated and inspired by all things wild – and of course, cooked over the flames.

LEARN TO COOK A FEAST OVER FIRE BENEATH THE TREES
Join Beckie, Christian and their team at The Salt Box and reconnect with traditional open-fire cookery techniques, celebrating wild and locally sourced ingredients enjoyed in their woodland kitchen.
At The Salt Box, each and every menu is centred around a feast cooked over fire. The oldest and most primitive method of cooking known to man, they are firm believers that everything tastes better cooked over an open flame.
Focusing on wild ingredients, locally sourced produce and moving with the bounty of the seasons, The Salt Box focuses on a root to fruit and nose to tail ethos – the foundation in which they craft their menus.
The Salt Box have just launched their 2022 Courses Calendar, including a range of six different courses, depending on abilities and interests. From the most popular Seasonal Cooking Over Fire Course to the Advanced Cooking Over Fire – they run courses for those not just with little experience with cooking over fire, but those keen to expand on their skills.
Their seasonal Cookery Courses host small intimate groups – giving everyone ample support and opportunity to ask plenty of questions throughout the day! Guests get stuck in from the get go, lighting their fires and cooking up to 5 dishes throughout the day. Headed up by Co-Founder and Head Chef, Christian, their tutors are very experienced and passionate when it comes to cooking over the flames.
Championing the benefits of eating wild game and the positive effect consuming it has on our natural environment, The Salt Box hosts two game butchery and cookery courses – including Wild Venison and Small Game (Feather and Fur). Guests learn how to pluck, draw and skin a selection of seasonal small wild game, using the whole animal from nose to tail, whilst also gaining insight on how to reduce waste and get the most from the animal. And of course, they’ll be a veritable feast to indulge in!
Other courses include their Wild Italian Cookery course, sparked by Co-Founder Beckie’s childhood in Northern Italy. And the flavour doesn’t stop there – their Fire and Spice course features a selection of homemade spice blends to create dishes with beautifully layered flavours, inspired by the flavours of the East.
“We were so looking forward to doing our Cooking Over Fire course, but this was everything we hoped for and so much more! The tips and tricks and skills that we learned over the day were fantastic and so informative, the food and drinks were flowing throughout and it was fun and so interactive to spend the day with the team. All courses are priced at £165pp for a full day experience, taking place in their Woodland Kitchen based on the Priory Farm Estate in South Nutfield, Surrey.
